Chicken

  1. Do NOT cut your chicken yet.

  7. If it is, then turn off the heat and scoop out all the chicken.

Tomato-spice paste

  1. Blend your tomatoes. Also, throw in a few hundred grams of bell peppers for funsies.
  2. Heat half the oil in a large pan/tawa/wok. Add half the garlic & equal amounts of ginger paste, along with 3-4 cardamom pods and 3-4 clove sticks.
  3. After 15 seconds of stirring, add half your onions onions (optional: add spinach after a few minutes).
  4. Stir the onions until they become golden-brown in colour.
  5. Throw in your spices, and immediately pour the blended tomato into the large pan/tawa/wok.

  7. Add the 2 tsp of kasuri methi and mix it in.
  8. Use an immersion blender to blend onion pieces and place the paste aside while the soup gets ready.

Soup

  1. Add all your remaining vegetables (except carrots, corn, mushrooms, and onions) into the broth and immersion blend.
  2. Make sure you completely obliterate the vegetables. Spend some time ensuring you get a good consistency. This step will make or break your Thoop.
  3. Turn on the heat again. Add the carrots, corn, mushrooms, and onions and cook until the mushrooms are cooked.

Putting it all together

  1. Chop chicken into 1×1 inch cubes and toss ’em back in the Thoop.
  2. Add your tomato-spice paste and mix.
  3. Let the Thoop simmer for a few minutes until the chicken is fully cooked.
  4. Add more salt/pepper if needed.

Enjoy!
